Peanut Butter & White Choc Energy Balls

These are one of the most-loved studio treats—sweet, simple, and full of feel-good flavour. Perfect post-yoga or as a little mid-afternoon boost.

Ingredients:

  • 125g oats, blitzed into a coarse flour

  • 65g peanut butter

  • 95 honey or maple syrup

  • 55g white choc chips

  • 30g cocoa powder

  • 25mls water

Method:

  1. In a blender mix all the ingredients. You might need to heat the Peanut Butter a little.

  2. Add 25mls of water to make a big dough like ball.

  3. Using a teaspoon divide the mixture into balls.

  4. Drizzle with some of the melted white choc buttons.

  5. Store in an airtight container in the fridge. Makes around 15 energy balls.

Note: This works best with a high-powered blender or food processor, like any of the Ninja Blenders.

This recipe was inspired by my beautiful friend and nutrition coach, Vikki Cronin, who generously shared the original with me. I’ve adapted it to suit my studio treats and plant-based approach—but the heart of it is all hers. You can find more of her amazing work at www.themacrocoach.ie
